Walter Schullian produces its wine Lacus (from the Latin "lake") south of Caldaro. Behind the name Lacus there are small batches of Cabernet and Merlot that are exclusively cultivated sustainably. Both varieties are harvested at the same time, fermented spontaneously and bottled without any fining or filtration. The result is a highly complex, long-lived wine.
